Egg and salad brunch

Studies have shown that eating breakfast is linked to good health, better memory and concentration, lower levels of “bad” LDL cholesterol, and lower chances of getting diabetes, heart disease, and being overweight.

Eggs are a rich source of proteins, vitamin D, B6, B12 and minerals such as zinc, iron and copper. In addition, it contains an amino acid called leucine, which helps to burning extra fats.

Add vegetables to the mix and you increase your intake of vitamins and minerals, essential nutrients to aid weight loss.

Ingredients

  • 2 organic free range eggs.
  • 1-2 tbsp coconut oil.
  • 1-2 tbsp extra virgin olive oil.
  • 1 red bell.
  • 1 red onion.
  • 1 avocado.
  • 1 bag of mixed salad leaves.
  • 1 handful torn basil leaves.
  • 1/4 tsp Himalayan salt.
  • 1/4 tsp fresh ground pepper.

Method

  1. Chop, deseed and dice the bell pepper.
  2. Chop avocado.
  3. Slice the onion.
  4. In a medium pan, fry the egg in coconut oil to your own taste and season with salt and pepper.
  5. Meanwhile, combine the salad leaves, red pepper, avocado, onion and basil leaves in a large salad bowl, not forgetting to drizzle over some extra virgin olive oil.
  6. Serve the salads on a plate, topped with the fried eggs, eat and enjoy.
