Most people love a Chinese takeaway. But it has a bad reputation for being high in calories.
The truth is, it’s the sauces that cause the problem. Stir-frying is actually one of the healthiest ways to cook. So why not try this recipe next time you fancy a Chinese.
Ingredients:
- 175g red lentils
- 500g baby spinach leaves, washed
- 4 small chicken breast fillets, skinless
- ½ tsp freshly ground black pepper
- ½ tsp ground coriander
- ½ tsp ground cumin
- 3 garlic cloves
- 1 dried chilli
- 1 tsp reduced salt soy sauce
- 25g roasted nuts, chopped.
Method:
- Mix the three spices and dust the chicken breast with the mixture.
- Pan-fry the chicken lightly in oil for 7-8 minutes on each side, turning, until cooked.
- Heat large woks until hot then add the oil, garlic and chilli and cook.
- Add the spinach to the mixture and heat until wilted, pure in the soy sauce and season as required.
- Stir in the lentils and cooked.
- These lovely meal servers 4, so warm up some plates, tuck in and enjoy. Make sure to add the chopped nuts to the dish for the benefit of fibre, protein and antioxidants, which can aid weight loss.
