Ingredients
- 1 large egg.
- 1 tbsp milk.
- 1/4 tsp vanilla extract.
- 1/2 tbsp coconut oil.
- 3 pinches of cinnamon.
- 175g cup blueberries, raspberries, and strawberries.
- 2 tbsp Greek yoghurt.
- 1 tbsp chopped pecans.
Method
- Mix the large egg with milk, cinnamon and vanilla extract in small bowl.
- Cook omelette over medium heat in a non-stick pan with the coconut oil, until set and golden.
- Pan-fry the berries over medium-high heat, in another pan, until fruit begins to cook.
- Place the omelette on a plate, spread over Greek yogurt, then scatter with berries, chopped pecans, and dust with cinnamon.
- Roll up and serve.
