Healthy breakfast egg muffinThis breakfast egg muffin has all the good nutrients to keep us going up to lunchtime.

Eggs are a very good source of protein plus, selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. Spinach contains dietary fibre, which facilitates better digestion plus, calcium, iron, magnesium, potassium, copper, and lots more.

This morning starter contains only 309 calories and a massive helping of 20.9g of protein, which aids good health.

Ingredients

  • 1 wholemeal English muffin, sliced in half.
  • 1 egg.
  • 20g reduced-fat cheese (feta or cottage cheese).
  • 20g fresh spinach leaves.
  • 1 tomato.
  • 1/4 tsp of ground black pepper.

Method

  1. Gently simmer the egg in boiling water for 3 to 4 minutes, until still runny in the middle for the perfect poached egg.
  2. Toast the muffins on the cut sides only under a grill.
  3. Spread the toasted sides with the reduced-fat cheese and return to the grill for 1 minute to melt the cheese (optional).
  4. Lay the spinach leaves and sliced tomato onto the muffin.
  5. Finish off by placing the poached egg top, season with black pepper and cover with the other muffin half. Now it’s ready to eat, enjoy!
