Ingredients
- 1 wholemeal English muffin, sliced in half.
- 1 egg.
- 20g reduced-fat cheese (feta or cottage cheese).
- 20g fresh spinach leaves.
- 1 tomato.
- 1/4 tsp of ground black pepper.
Method
- Gently simmer the egg in boiling water for 3 to 4 minutes, until still runny in the middle for the perfect poached egg.
- Toast the muffins on the cut sides only under a grill.
- Spread the toasted sides with the reduced-fat cheese and return to the grill for 1 minute to melt the cheese (optional).
- Lay the spinach leaves and sliced tomato onto the muffin.
- Finish off by placing the poached egg top, season with black pepper and cover with the other muffin half. Now it’s ready to eat, enjoy!
