Ingredients
- 400g mixed nuts – these can be cashews, peanuts, walnuts.
- 1 tbsp organic butter.
- 1 medium-sized onion, peeled and finely-chopped.
- 2 cloves of garlic. peeled and finely chopped.
- 100g organic mushrooms.
- 70g fresh wholemeal bread, made into breadcrumbs.
- 200g chickpeas.
- 2 tbsp parsley, chopped.
- 1 medium egg, lightly-beaten.
- 1 tbsp dried mixed herbs
- Salt and freshly ground black pepper to season.
- 2 tbsp coconut oil.
Method
- For speed, roast the mixed nuts in a frying pan, with no oil.
- Transfer the roasted nuts to a food processor and blend until the mixture looks like sand.
- Gently melt the butter in a saucepan, over a medium heat and cook the onions, garlic and mushrooms until they’re transparent but not brown, season with salt and pepper.
- Into the food processor add the breadcrumbs, chickpeas, parsley, eggs, mixed herbs, salt and pepper. Note, add the cooked onions, garlic, mushrooms too and blend until the mixture is quite smooth.
- Leave the mixture to stand for a bit. 5-10 minutes should do it.
- Next, shape the mixture into 6 burger-shaped patties, then lightly coat them in breadcrumbs and allow them to firm up by chilling in the fridge for 10 to 20 minutes.
- Heat the coconut oil in a frying pan and fry the cutlets for 3 minutes on each side, or until they’re golden brown.
- Serve warm with salad or eat as a snack cold, enjoy.
