Easy and quick to prepare, these healthy fritters make a filling start to the day. Using brown rice flour is a nutritious alternative to wheat flour and it’s gluten free.
Ingredients
- 85 g (3 oz) brown rice flour.
- 1 tbsp baking powder.
- 2 eggs.
- 200ml or (7 oz) milk.
- 1 courgette.
- 1 handful sweetcorn.
- 1 clove garlic crushed.
- 2 tbsp fresh thyme leaves.
- 1/2 onion finely grated.
- 2 tbsp coconut oil.
- 1/2 tsp Himalayan salt.
- 1/2 tsp freshly ground black pepper.
Method
- Sift the flour and baking powder into a large bowl.
- Make a well in the centre of the mixture and pour the eggs into it.
- Using a wooden spoon, gradually draw in the flour and slowly pour in the milk, while stirring the mixture to create a thick batter.
- Grate the courgette over some kitchen paper, to help absorb some of the juices.
- Add the grated courgette to the batter, along with the sweetcorn, garlic, thyme and onions plus salt and pepper to season, mix well.
- Heat the oil in a large frying pan over a medium to high heat.
- Drop the courgette mixture in, a large spoonful at a time – leave a little space between them.
- Cook for 3 to 4 minutes until golden brown, then turn and repeat on the other side.
- Line a baking tray or plate with kitchen paper and transfer the cooked fritters onto it, this will help to absorb some of the cooking oil.
- Serve hot as a vegetable side dish or light snack.
