Courgette fritters

Courgette frittersEasy and quick to prepare, these healthy fritters make a filling start to the day. Using brown rice flour is a nutritious alternative to wheat flour and it’s gluten free.

Ingredients

  • 85 g (3 oz) brown rice flour.
  • 1 tbsp baking powder.
  • 2 eggs.
  • 200ml or (7 oz) milk.
  • 1 courgette.
  • 1 handful sweetcorn.
  • 1 clove garlic crushed.
  • 2 tbsp fresh thyme leaves.
  • 1/2 onion finely grated.
  • 2 tbsp coconut oil.
  • 1/2 tsp Himalayan salt.
  • 1/2 tsp freshly ground black pepper.

Method

  1. Sift the flour and baking powder into a large bowl.
  2. Make a well in the centre of the mixture and pour the eggs into it.
  3. Using a wooden spoon, gradually draw in the flour and slowly pour in the milk, while stirring the mixture to create a thick batter.
  4. Grate the courgette over some kitchen paper, to help absorb some of the juices.
  5. Add the grated courgette to the batter, along with the sweetcorn, garlic, thyme and onions plus salt and pepper to season, mix well.
  6. Heat the oil in a large frying pan over a medium to high heat.
  7. Drop the courgette mixture in, a large spoonful at a time – leave a little space between them.
  8. Cook for 3 to 4 minutes until golden brown, then turn and repeat on the other side.
  9. Line a baking tray or plate with kitchen paper and transfer the cooked fritters onto it, this will help to absorb some of the cooking oil.
  10. Serve hot as a vegetable side dish or light snack.
